CHICKEN DUM BIRIYANI
Ingredients:
Chicken-1 lb
Basmati-4 cups
Ginger garlic paste-1 tablespoon
Coriander powder-1 tablespoon
Cumin powder-1/2 teaspoon
Turmeric-1/2 teaspoon
Chili powder-1 tablespoon
Oil-3 tablespoons
Salt -as per taste
Onion(fried)-1 cup
Green chilies-2
Curd-1 cup
Cloves-8
Cinnamon stick-2 (1 inch)
Mace/javitri-1
Star anise-4
Bay leaves-2
Cardamom-2
Shajeera-1/2 teaspoon
Garam masala powder-1 teaspoon
Saffron-1 pinch
Milk-2 tablespoons
Mint leaves
Coriander leaves
Preparation:
Marinate chicken pieces with ginger garlic paste, coriander powder, cumin powder,turmeric,chili powder, salt,curd,fried onions,garam masala powder,mint,coriander leaves for at least 2 hours.
Boil water (3 liters) in a vessel,add salt,whole garam masala,basmati rice(soak it for 1/2 hour) and cook until its 80% done.strain the water and keep it a side.
Take a heavy bottomed pan.Add oil and marinated chicken pieces and cook for 5 mins.Now add cooked rice on it and spread it evenly. Add saffron in milk and spread it on rice.sprinkle mint and coriander leaves.close the lid and cook for 30 mins on medium flame.serve hot with raita.
