CHICKEN NOODLES

 
 
CHICKEN NOODLES

Ingredients:
Chicken (boneless)-1 lb
Noodles-250 gms
Chili powder-1/2 teaspoon
Salt -as per taste
Ginger garlic paste-1/2 tablespoon
Coriander powder-1/2 teaspoon
Cumin powder-1/4 teaspoon
Garlic (chopped)4 cloves
Green chilies-2
Carrot(chopped and boil for 3 mins))-1
Green beans (chopped and boil for 3 mins)-10
Eggs-3
Soy sauce-1 tablespoon
Chili sauce-1 tablespoon
Corn flour-2 tablespoons
Curry leaves

Preparation:
Marinate chicken pieces with ginger garlic paste, coriander powder, cumin powder,chili powder,salt,egg (1)and corn flour for 10 mins.add oil in a pan and deep fry the marinated chicken pieces.
Boil noodles with water and salt until it's done.strain water and keep it aside.
Add 2 tablespoons of oil in a pan,add chopped garlic,green chilies,curry leaves and fry for 1 min. Add eggs and stir it to get scrambled eggs.Now add cooked carrot,green beans ,fried chicken pieces and fry them for 1 min.add soy sauce,chili sauce and fry for 1 min. Add cooked noodles and cook for 5 mins.stir occasionally.

MUTTON CURRY 

Ingredients:
Mutton-2 lb
Onion(chopped)-2
Ginger garlic paste-1 tablespoon
Coriander powder-1 tablespoon
Cumin powder-1/2 teaspoon
Turmeric-1/2 powder
Oil-2 tablespoons
Chili powder-1 tablespoon
Salt-as per taste
Curd-1 tablespoon
Garam masala powder-1 teaspoon

Preparation:
Marinate mutton with ginger garlic paste, coriander powder, cumin powder,turmeric,chili powder and curd for 10 mins.
Add oil in a pressure cooker,add chopped onions and fry until oil oozes out.Add marinated mutton and cook for 5 mins. Add water(1 1/2 cup) and close the lid.cook for 4 to 5 whistles.let it cool and add salt.cook until oil oozes out.sprinkle garam masala powder.

CHICKEN DUM BIRIYANI

Ingredients:
Chicken-1 lb
Basmati-4 cups
Ginger garlic paste-1 tablespoon
Coriander powder-1 tablespoon
Cumin powder-1/2 teaspoon
Turmeric-1/2 teaspoon
Chili powder-1 tablespoon
Oil-3 tablespoons
Salt -as per taste
Onion(fried)-1 cup
Green chilies-2
Curd-1 cup
Cloves-8
Cinnamon stick-2 (1 inch)
Mace/javitri-1
Star anise-4
Bay leaves-2
Cardamom-2
Shajeera-1/2 teaspoon
Garam masala powder-1 teaspoon
Saffron-1 pinch
Milk-2 tablespoons
Mint leaves
Coriander leaves

Preparation:
Marinate chicken pieces with ginger garlic paste, coriander powder, cumin powder,turmeric,chili powder, salt,curd,fried onions,garam masala powder,mint,coriander leaves for at least 2 hours.
Boil water (3 liters) in a vessel,add salt,whole garam masala,basmati rice(soak it for 1/2 hour) and cook until its 80% done.strain the water and keep it a side.
Take a heavy bottomed pan.Add oil and marinated chicken pieces and cook for 5 mins.Now add cooked rice on it and spread it evenly. Add saffron in milk and spread it on rice.sprinkle mint and coriander leaves.close the lid and cook for 30 mins on medium flame.serve hot with raita.

Ingredients:
Mutton(keema)-1 lb
Onion(chopped)-1
Green chilies-2
Ginger garlic paste-1 tablespoon
Coriander powder-1 tablespoon
Turmeric-1/2 teaspoon
Chili powder-1 tablespoon
Salt-as per taste
Egg-1
Oil-2 tablespoons
Garam masala powder-1 teaspoon
Curry leaves (chopped)
Coriander leaves (chopped)

Preparation:
Mix all the ingredients above except oil.marinate it for 10 mins and make it in to small patties or any shape. Add oil in a pan and add mutton patties fry for 5 mins on each side in medium flame.

Ingredients:

Corn flour-2 tablespoons 
Pepper powder-1/2 teaspoon
Egg-1
Salt-as per taste
Chili powder-1 tablespoon
Ginger garlic paste-1 tablespoon
Coriander powder-1 tablespoon
Cumin powder-1/2 teaspoon
Turmeric-1/2 teaspoon
Soy sauce-1 teaspoon
Oil- for deep frying
Garam masala powder-1 teaspoon
Lemon -1
Curry leaves
Coriander leaves-for garnish

Preparation:
Marinate chicken with salt ,corn flour,egg and pepper for 5 mins. Add oil in a pan and deep fry chicken pieces.
Add 1 tablespoon of oil in another pan,add cashew nuts,green chilies,curry leaves,ginger garlic paste, coriander powder, cumin powder,turmeric,chili powder,garam masala powder and fry for 1 min. Add soy sauce,chicken pieces mix it well and fry for 2 mins.squeeze some lemon juice and garnish with coriander leaves.

DONDAKAYA CURRY

Ingredients:
Dondakaya(slices)-1 lb
Onion(paste)-1
Green chilies-2
Ginger garlic paste-1 tablespoon
Coriander powder-1 teaspoon
Cumin powder-1/2 teaspoon
Turmeric-1/2 teaspoon
Chili powder-1 tablespoon
Salt-as per taste
Coconut milk-1/2 cup
Garam masala powder-1 teaspoon
Curry leaves

Preparation:
  Add oil in a pan,add onion paste,green chilies,curry leaves and fry for 5 mins. Add ginger garlic paste, coriander powder, cumin powder,turmeric and fry until oil oozes out.
    Add chili powder,salt ,dondakaya slices,close the lid and fry for 10 mins on medium flame. Add water(1 cup) and cook for 5 mins.Then add coconut milk and cook until oil comes out.sprinkle garam masala powder.
